BTW, I chose "controller" mode and now GI doesn't react to keyboard/mouse... any clues on how to undo that?

I suspect this is a game limitation, where only input method can be used at once. You could check whether using a virtual desktop makes any difference.
If you cannot revert the settings, run regedit from the same WINEPREFIX and delete the key GENERAL_DATA_hxxxxxxxxxxx in HKCU\Software\miHoyo\Genshin Impact.

.Yes, it seems a game problem. Xbox 360 gamepad worked with no problem.
